My New Best Friend.....the Crock-pot!

For years, I have been using a crock pot with very little success. I would hear my coworkers talk about how using a crock pot helps them save time and money by not eating out so much. I have been married for 19 years and still have the original crock pot that I received as a wedding present. I could never figure out why my friends have been singing the praises of the crock pot until now. You see, usually I would put in my well-planned and well-thought out dinner in the crock pot before heading off for school only to return home and find the meat overcooked and dried out. In the end, I wasted time and money by having to throw away the very meal that was supposed to make my life a little easier at dinnertime. This Christmas, my mother-in-law gave me a crock pot that I have had my eye on at Target for quite some time. It is programmable. The other day, I used my new best friend to make pork tenderloin. This meat just fell off the fork and was cooked to perfection. I now have figured out why I have had a love-hate relationship with my crock pot while my friends have been singing its praises...it's the new technology of the crock pot. Back when I got married, there was no such thing as a programmable crock pot with a digital timer and beeping "time's up" warnings. Now when the cooking time comes to an end , the crock pot beeps and immediately switches to "warm." If I am not home to turn the pot off, it just kicks into warming gear and keeps my dinner from overcooking and drying out. Yes!!!!!!!!!!!!!!!!!!

Wonderful Pork Tenderloin Recipe
1 2 1/2 lb. pork tenderloin
1 packet of Lipton Onion Soup Mix
1 cup water
3/4 cup white cooking wine
2-3 large garlic cloves pressed
pepper to taste

Place tenderloin in crock pot. Sprinkle soup mix and pepper over the meat. Press the garlic cloves onto the top of the meat. Add the water and the cooking wine. Cook on high for 4 hours. At the end of the 4 hours, I checked the meat. It was done, but not as tender as I would have liked so I turned the crock pot on low for another hour. The meat then stayed on warm for about 30 minutes until I had the rest of the dinner made. It was so delicious and no knife was required! Enjoy! (:
